Ingredients
26 oz Swanson Beef Stock, 26 oz Water, tap3 medium, cut into bite-sized pieces Carrots, raw.25 c. split Mung Beans, dried 1 -2 c. Organic Kidney Beans, dried, 3 Whole bay leaf1 Lg. Zucchini cut into bite-sized pieces 2 medium *Potato, raw, chopped 1 Onions, raw, diced 3 tsp Garlic 3 stalk, medium Celery, raw, chopped1 lb. Beef, ground, 80% lean meat / 20%, browned .5 tbsp (pinch) Basil, dried1 tsp (pinch) Pepper, black0.5 tsp (pinch) *Morton Nature's Season Seasoning Blend1 tsp (pinch) Thyme, dried2 medium Mushrooms, fresh, gently chopped1 14.5 oz. can Del Monte Diced Tomatoes with Basil, Garlic & Oregano
Directions
Brown meat with half of garlic and onion. Drain and rinse. Add meat to crock pot. Then add stock and water. Kidney & mung beans. Then carrots, celery, zucchini, etc. Finally seasoning.
Cook on high until kidney beans are tender (about 6 hours or so).

Serving Size: Makes 5 quarts. About 8 - 10, 1.5-cup servings
