Turkey Souffle

Ingredients

2 cups fresh turkey breast meat - cubed9 medium eggs, whites/yolks separated9 tbsp white flour (whole wheat flour can be substituted)9 tbsp margarine1 tsp black pepper1 tsp salt
Melt margarine in at least a 2 qt saucepan and slowly add flour, stirring constantly until mixture is creamy.
Turn off stove.
Slowly add egg yolks and whites continue stirring as the mixture cools slightly.
Stir in cubed turkey breast meat until thoroughly mixed. Pour mixture into a greased 4-6 qt. baking dish.
Bake uncovered at 350° for 45 minutes, or until the top is slightly browned and/or a knife comes out clean from the center of the souffle.
Makes approximately 10 servings.
**Recipe can be divided into thirds for smaller serving needs.
