Denver Omelet (Body Revolution meal plan)

Ingredients
Coconut Oilchopped onion or dehydrated3.5 slices chopped Canadian bacon2 lg eggs3 lg egg whitespinch perfect Mediterranean Herbchopped green and red or yellow bell paperShredded Monterey & Colby (optional but included in the nutrition)
Directions
IN cast-iron skillet over low heat, heat .5 tsp oil. Add onion & bell pepper. Cook, stirring occasionally until peppers are tender, about 5 min.
Stir in ham & cook until heated, 1-2 min. Transfer the mixture to a bowl & wipe out the skillet.
Preheat the proiler to low, lightly beat whole eggs & whites. In the skillet over med add eggs, onion/pepper mixture and remaining pepper. with wooden spoon mix ingredients, making sure the pepper mixture is evenly spread. Cook for 2 min until the bottom is set. Add cheese spread evenly and place pan under broiler. Cook until firm on top, about 1 min.
Let stand a min, you can flip over & cut in half or you can leave flat and just divide it in half. Serve....
