Kale Vegetable Soup

Directions
1 cup black beans1 red onion3 cups chopped kale1 cup winter squash cubes1 carton (large) fat free chicken broth1 can mixed vegetables2 cups tap watersalt and pepper to taste
Dice onion and saute' with cooking spray to soften.
Add chicken stock and water and then add vegetables.
Cook on medium heat for about 1 hour until vegetables are soft.

OVETABUILDS - of course I realise THIS particular recipe could be adapted to suit vegetarians, was suggesting that an indication that a recipe is vegetarian would be a good idea (particularly when it is a "Featured Recipe" on an email and not one found by searching where you can specify veggy) - 12/12/07
