Taco Salad my way

Ingredients
1 romaine whole romaine lettuce1 iceberg lettuce 1 red pepper chopped or julliened1 lb lean ground turkey1 pkg taco seasoning1 cup water (use whatever the package recommends)1 1/2 cups mozzarella, cheddar, jack, or mixed blend, grated1/2 to 3/4 cup catalina dressing or more depending on your taste1 cup lime tortilla chips (or whatever kind you like)1/2 red onion, optional
Directions
/Cook turkey, add taco seasoning following directions on package.

Cool turkey taco mix
.
Meanwhile break lettuce into bite size pieces

Grate cheese (or buy pre-grated cheese)

Chop onion if using

Break tortilla chips

When turkey is cooled, toss lettuce, turkey, red pepper, onion and cheese with catalina dressing

Top with tortilla chips

Serve.

Makes four main courses or 8 - 10 if bringing to a potlock or making as a side dish.
