Leftover Beef Enchiladas

Ingredients
1 medium onion, chopped1/4 c. sweet red pepper, sliced1/4 c. yellow pepper, sliced2 cloves garlic, minced1 lb cooked roast beef, cubed or shredded1 1/2 cups Enchilada sauce1 teaspoon cumin8 Smart & Delicious 100 Calorie Tortillas1 cup cheddar cheese, shredded1/2 cup sour cream
Directions
Spray saute pan with cooking spray. Add chopped onions, garlic and saute till tender. Add bell peppers and beef. When beef is heated throughout, mix in chili peppers and add 1 c. enchilada sauce. Fill 8 8" tortillas with filling sprinkling with cheese. Reserve 1/2 cup of cheese for top. Place side by side in a 9x13" pan. Pour remainder 1/2 cup enchilada sauce over top of the enchiladas then sprinkle remaining cheese over top. Bake for 30-40 minutes at 350*. Serve with plain greek yogurt or sour cream.
