Ham & Broccoli Muffin

Ingredients
1 1/2 cup reduced fat Biquick mix1 cup chopped cooked ham or canadian bacon2 cups(8 oz) redued fat Cheddar cheese1 (10 oz) pkg frozen chopped broccoli, thawed & drained1/2 cup fat free milk1 tbsp melted butter1 large egg cooking spray(like pam)
Directions
1-combine baking mix, ham, 1 3/4 cup cheese, and broccoli in barge bowl. make a well in center
2- stir together mil, butter, egg until blended, add to cheese mixture. Place paper baking cups in muffin pans, and coat with pam.Spoon batter ito paper baking cups, filing 3/4 full. Springkle tops with remaining 1/4 cup cheee.
Bake at 425 for 18 minutes. let stand 2-3 minutes before rmoving from pans. Makes about 15 muffins.Substitue mini muffin pans if desired. Bake for 14 minutes, til golden. Makes 2 1/2 doz mini muffins.

    These are yummy! They did still stick to the paper even with pam and make sure your broccoli isn't too big. Perfect for brunch. - 12/12/10
