Paleo Slow Cooker Roasted Red Pepper Sweet Potato Soup

Ingredients
2 huge sweet potatoes, peeled and cubed (abt. 6 cups)14 oz. red roasted peppers in water (drained)14 oz. coconut milk1 cup chicken stock 1 small red or yellow onion, diced2 cloves garlic1/2 tsp black pepper (optional) 1/2 tsp red pepper flakes (optional)
Directions
1. Add all ingredients to slow cooker
2. Cook for 4-6 hours
3. Blend and serve
