Chicken, Vegetable and Black Bean Goulash

1 onion 1/2 to 1 cup chopped carrots1 cup diced celerysaute onion, carrots and celery in large skillet in chicken broth until softenedAdd a can of corn (drained)Add a can of black beans (drained)Add a diced cooked chicken breastHeat through. Just before servingStir in 1 cup of FF (or light) sour creamStir in 1 cup of shredded cheese blendStir in 2 TBLS Dijon Mustard (more or less to your taste)Heat through until bubbly
This is something I will make often. It is great as a soup/stew by itself which is how I will most likely serve in the future. Paired with bread or chips and salsa it would be great. I input into my weight watcher tracker and it add up to 9 points plus per very generous serving.

saute in large skillet in chicken broth until softened
Add a can of corn (drained)
Add a can of black beans (drained)
Add a diced chicken breast
Stir in 1 cup of FF (or light) sour cream
Stir in 1 cup of shredded cheese blend
Heat through until bubbly and serve with 2 soft flour tortillas (for tacos) or as a topping over greens.
Serving Size: Makes 4 generous servings
