Curried Couscous

1 c couscous1 c boiling water2 cubes chicken boulion1 1/2 T olive oil1 T curry powder2 cloves garlic1 medium red bell pepper, chopped1/2 medium onion, chopped1 can rotel tomatoes1 pinch salt1 pinch pepper2 T balsamic vinegar4 T parmesan cheese
1) Bring water and boulion to a boil
2) Stir in couscous, return to boil, then remove from heat and cover. Let stand 5 minutes. Fluff with fork.
3) Heat oil and curry powder in skillet on medium heat for 5 minutes
4) Add garlic, onion, peppers. Saute for 3-4 minutes.
5) Stir in tomatoes, couscous, salt and pepper
6) Put into a casserole dish, splash with balsamic vinegar and sprinkle with cheese
7) Bake at 350 degrees for 20-30 minutes
