Cauliflower Soup

Ingredients
1 Tbsp Olive Oil1/2 cup Chopped Onion1 clove Garlic, Minced2 cups Water2 cups Chicken Broth1 head Cauliflower (cleaned and broken into pieces)1 tsp Salt1/2 tsp Black PepperDash nutmeg
Directions
Saute onions in olive oil until light brown, add garlic and saute a couple of more minutes. Add water, chicken broth, and cauliflower, bring to a boil and simmer for 20 minutes. Let it cool slightly. Add spices and blend until creamy with an immersion blender.
