Egg, large2 Tbsp flaxseed, ground1/2 tsp baking powder1/2 tsp ground cinnamon1 tsp butter
Break egg into an ungreased glass custard cup, or microwave-safe mug. Beat with a fork, add dry ingredients and continue to mix with fork. Top with butter. Microwave on high for one minute (you may need a little more time if you have a low-wattage microwave oven.) Remove muffin from cup while hot, slice, and add toppings, if desired.
