Potatoes, Peppers and Eggs

Ingredients
2 Green Bell Peppers1 Onion6 Large Eggs2-3 White Potatoes, EVOOSalt
Directions
-Saute peppers and onions in EVOO until caramelized and soft. Set Aside.

-Microwave or bake the white potatoes until soft, unpeel the potatoes when done. Set aside.

-Beat 6 large eggs until fluffy, (I add a little water to make them fluffy) and then scramble.

-When eggs are done combine the peppers, onions, potatoes and eggs.

Serve with salsa, hot sauce, avocado, or on a bagel! Enjoy!
