Cucumber, Tomato, Spinach BOATS

Ingredients
2 large cucumbers (peeled)3 tomatoes (sliced)1 bunch spinach (chopped)8 tbsp hummus (clean .. read the labels)
Directions
Peel cucumber and slice ends off. With a spoon, scoop out the seeds and discard. Spread humus inside and add tomatoes and spinach (or other toppings). Sprinkle with pepper (or spices of your choices).
