Pineapple Banana Nut Muffins

3 c. self-rising flour1 tsp baking soda1/2 c. pecans, chopped1 tsp cinnamon1/2 tsp nutmeg2 c. mashed ripe bananas1 (8 oz) can crushed pineapple, drained2 tsp vanilla2 c. sugar1 tsp salt3 eggs1 c. canola oil1/2 c. natural applesauce
Combine dry ingredients, stir in nuts and set aside. Combine remaining ingredients and whisk well. Add to dry mixture, stirring just until batter is moist. Using a cookie scoop, scoop into greased mini-muffin or muffin tin. Bake at 325 for 20 minutes.
