Ingredients
2/3 cup whole wheat flour1 cup almond/soy or other non-dairy milk (the PCRM recipe calls for only 2/3 cup but I found the mix was too thick and increase it by a 1/3 cup)2 tsp baking powder1 tsp cinnamon1 tsp ginger powder or 2 tsp fresh grated ginger1/4 black pepper1/4 tsp cloves1/4 tsp cardamom1/4 tsp saltNonstick cooking spray (optional)
Directions
Mix the flour, salt, baking powder, pepper, cloves, cardamom, cinnamon, and ginger together in a metal bowl. Add the milk to the dry ingredients and mix them until they are well combined. Put this mixture in a measuring cup, let sit for a few minutes. Using a nonstick pan (or a pan lightly sprayed with nonstick cooking spray) on medium heat, pour roughly 1/3 cup pancake batter onto the middle of the pan. When the top side bubbles and is mostly firm, flip the pancake over. Keep this on the heat for another 1 to 1˝ minutes. Repeat until you’ve used all the batter.
