Tex Mex Rice Bake

Ingredients
*Brown Rice, long grain, 3 cup cookedOnions, raw, 1 large black beans, 1 can, drained2 tsp cumin1 tbsp chili powderSalsa, 2 cupYellow Sweet Corn, Frozen, 2 cup kernelsPeas, frozen, 2 cupCheddar Cheese, 250 grams
Directions
Cook rice per package directions

Saute onion, add chick peas. Add cumin and chili powder.

Add corn and peas

add salsa and simmer until slightly thickened

spread rice over bottom of cassarole dish. Sprinkle 1/2 of shredded cheese. Layer 1/2 of bean mixture. Sprinkle remaining cheese and spread remaining bean mixture. Bake in over for 30min @ 350 degrees. Makes 6 servings.
