2 cups Chicken Broth, vegetable broth OR water1 cup quinoa2 cups frozen peas, thawed1/4 cup diced onion3 Tbsp EVOO3 Tbsp red wine vinegar1/2 cup chopped parsley1/2 cup toasted chopped almondssalt & pepper to taste
Cook quinoa in broth OR water according to directions, allow to cool. Meanwhile combine the remaining ingredients exept for almonds and parsley. Toss in the cooled quinoa and stir in nuts and herbs, adding salt and pepper to taste. Serve chilled wih fresh lemon.
