Zucchini, 1 medium*Summer Squash, 1 mediumTomato Sauce, 1.5 cup (more if needed)Kale, 1 cup, chopped Spinach, fresh, 1 cup Cottage Cheese, Nonfat, 1.5 cup *Ricotta cheese, fat-free, 2/3 cupshredded cheese .5 cupshredded cheese .5 cup
preheat oven to 350
slice zucchini and squash in long pieces
mix together cheese (do not include half of shredded cheese)
layer slices in a large glass pan
in between slices put cheese mixture
top with kale and spinach and other veggies if desired
repeat
top with rest of shredded cheese
cover with tin foil
and place in oven
cook for 45 min
