Seafood Chowder

Ingredients
32 oz Unsweetened Almond Milk8 oz pollock, cut into I/2 inch pieces8oz bay scallops8 oz shrimp1 medium potato (chopped small)1/4c minced onion1T olive oil2T chia seed1T lemon juicesaltpeppercelery seed
Directions
Pour Almond milk into a large pot over medium heat using a double boiler (do not bring to an active boil)

Add onion and chopped potato.
Let cook 10 min
Add Fish, scallops, and shrimp
Stir in olive oil, lemon juice, chia seeds, and spices to taste
Let cook an additional 20 min so that potatoes are tender.
