Brown Rice Greek Salad

Ingredients
Directions
1/2 red onion chopped1 cup dry brown rice (needs to be prepared for dish)1 cucumber (diced)1 container cherry tomatoes1/4 cup extra virgin olive oil2-3 Tbsp red wine vinegar2-3 Tbsp lemon juice2 cups cooked garbanzo beansBasil Leaves - 5-6 chopped
Cook 1 cup of brown rice according to directions.
Chop cucumber and onion.
Combine rice, onions, beans, cucumber, and tomatos in large container.
Dressing:
Mix well in a separate container the olive oil, vinegar, basil, lemon juice, & honey.
Toss the rice mixture with the dressing.
Add feta cheese, make sure rice is cooled first.
Serving Size: Makes 6 - 1 cup servings
