Vegetarian Quinoa Chili with Tofu

Ingredients
1/2 cup dry quinoa 1/4 package tofu1 can mixed beans (Blue Menu 6 Bean Medley1 can diced tomatos (no salt)1 can tomato paste1 cup diced red and orange peppers1 cup sliced or chopped carrots1/2 a large onion1 jalapeņo pepper, sliced, seeds removed(Any other vegetable desired)Chili powder, cumin, onion powder and garlic to taste.
Directions
Heat slow cooker on high and begin to boil the quinoa with 2 cups of water. When it starts to "fluff up", begin adding the beans, tomatoes, tomato paste and vegatables, adding the jalapeno last. Simmer for a few hours, stirring occasionally and adding in the spices closer to serving time! Enjoy topped with Nutritional yeast and/or vegan sour cream and save the leftovers!
