Crockpot Green Chile Chicken

1 tablespoon of cooking oil 3-4 lbs boneless, skinless chicken breasts or thighs 1/4 cup flour 1 tablespoon ground cumin 3 tablespoons chile powder 2 tablespoon dried oregano 1 teaspoon garlic powder 1 teaspoon salt 2+ six-ounce cans chopped green chiles 15 oz. can of diced tomatoes 1 onion, chopped 1 cup water or chicken broth
Heat cooking oil over medium high heat. Rub flour onto chicken breasts and sear them on both sides.
Place chicken in slow cooker, sprinkle spices on top. Pour in the tomatoes and green chiles, and add the onion on top. Add chicken broth or water until there is about an inch in the bottom of the crockpot. Too much liquid will make it soupy.
Cook on low for 7-8 hours. Chicken will fall apart and the liquid will have thickened. Remove chicken and shred using two forks, then put it back into the tomatoes and chiles. Serve plain with a stack of tortillas, or use as a filling for tacos, burritos, etc.
