Ampalaya Salad

Ingredients
1 pc Ampalaya1 medium Carrot1/2 cup Cane Vinegar1/4 cup Raw Sugar1 tsp Salt1/2 tsp Black Pepper
Directions
1. Slice ampalaya thinly. Soak in water with rock salt. Let stand for 30 mins. Squeeze the sliced ampalaya with your hands to remove much of the bitter juices. Rinse under tap water and drain well.
2. Peel the carrot and julienne. Toss with the drained ampalaya. Place the veggies in a glass jar.
3. Boil together the vinegar, sugar, salt and pepper. Pour into the glass jar. Chill until needed.
