Sweet Potato and Chickpea Tagine

Ingredients
Sweet potato peeled and cubed, 1 onion, 1 clove garlice, half a 400 gr tin of chickpeas, french beans top& tailled and chopped into small chunks, coriander, ginger and honey, slat and pepper, cumin, cinammon stick, 2 cups water, and a vegetable stock cube
Directions
This is Bill Grangerr's recipe, happily followed by me! So..
Chop the potatoes, onions, beans, crusht he garlic, prepare everything.
Then, heat teh oil and add the onion, cooking for 5 mins, until soft (over a medium heat). Then, add all the spices. Stif for 2 minutes, until fragrant.
Add the cubed sweet potato and the vegetable stock and water,bring to the boil, reduce heat, cover an simmer for 15 mins.
Add teh chickpeas and beans and simmer for a further 5 mins. Stir in the honey, season with salt and pepper (freshly ground preferably). And voila!
A middle-eastern feast! Serve on its own with crusty bread, or with couscous, and srpinle with fresh coriander.
