Black Bean Casserole

2 c. chopped onion11/2 c. chopped green peppers1 -14oz. canned tomatoes3/4 c. picante sacue2 cloves garlic 2t. ground cumin2-15 oz. can black beans drained and rinsed10- 7 inch corn tortillias2 c. shredded cheese, mexican
combines onion, peppers, undrained tomatoes, picante sauce, garlic and cumin. Bring to a boil. Reduce heat, simmer uncovered for 10 minutes. Stir in beans.
Spray 2 qt. rectangle dish with non-stick spray. Spread 1/3 of bean mixture over bottom. Top with 1/2 of tortillias and 1/2 of cheese. Add 1/3 of bean mixture then remaining tortillas and bean mixtures. Cover and bake 350 for 35-40 minutes. Sprinkle with remaining cheese. Let stand 10 minutes. Seves 8.
