Chile Cheddar Bacon Johnny Cakes

1.66 cup Cornmeal.25 cup all purpose flour1 tsp baking powder1 tbsp splenda2 large eggs1.5 cup milk2 tsp bacon grease1 tsp extra virgin olive oil2 oz cheddar cheese4 medium pieces bacon, chopped1 poblano chileor .5 cup canned green chiles
Set oven to low broil. Place bacon on sheet pan and place under broiler for 8 to 10 minutes.
While bacon is cooking, in a large bowl mix together cornmeal, flour, baking powder, and splenda. Whisk to mix together and remove clumps. In a second bowl, mix together eggs, milk, and olive oil. When bacon is finished cooking, add 2 tsp of bacon grease to wet ingredients. Slowly mix wet ingredients into dry ingredients, whisking. Fold in cheddar cheese, chopped green chiles, and chopped bacon pieces.
Heat your griddle to medium heat. Use a .25 meausring cup to spoon mixture onto griddle. Place in warm oven until ready to serve with hot maple syrup.
Serving Size: Makes 12-14 small cakes
