Ingredients
6 cups Matzo meal1.5 cup. Olive oil5.5 c. simply Egg Whites (about 21 egg equiv)1.5 c. chicken broth1 large onion diced1/4 c. saltPepper to taste
Directions
1. Cook onions in oil
2. Mix all ingredients and let sit while a pot of chicken soup begins to boil.
3. Drop golf sized balls of soft dough into soup and cook for an hour.

Serving Size: Makes 72 small-- or 36 servings of 2 small matzo balls
