Roasted Brussel Sprouts with White Wine

Brussel Sprouts, roughly chopped (about 20-25)4 tbsp Olive OilBlack Ground Pepper2 Shallots, chopped4 tbsp White Wine
Pre-heat oven to 375�
1. Cut off "stems" and roughly chop brussel sprouts. Place in single layer in greased baking pan. Add fresh ground pepper to taste. Drizzle with 2 tablespoons of olive oil.
2. Heat remaining 2 tablespoons of olive oil and add shallots. Heat over medium-low heat for about 1-2 minutes, stirring constantly.
3. Add 4 tablespoons of white wine to the shallots. Heat for 2-3 minutes, or until the wine has thickened.
4. Add shallots & wine to the brussel sprouts.
5. Heat in oven for 10 minutes. Mix with wooden spoon and return to oven for another 10 minutes. Sprouts should be a light tan color.
