Homemade Chicken & Veggie Soup

Ingredients
Chicken Broth - 48 ozCelery - 4 cups choppedOnions - 2 cups choppedCarrots - 1 cup shredded1 Rotiserrie Chicken (Kroger)Grapeseed Oil - 3 tbs1 can sweet cornGarlic - 2 tbs (minced)Optional:Fresh parsleyOreganoLemon PepperCayenne Pepper
Directions
Chop veggies and saute' over medium heat with grapeseed oil & 2 tbs minced Garlic about 6-8 minutes. Add salt & pepper to taste.

Add chicken (I buy a rotisserie chicken from Kroger and use the dark and light meat - no skin) and broth.

Simmer covered over Low/Medium heat for 25 minutes.

Optional: Lemon Pepper, Oregeno, Fresh Parsely, Cayenne Pepper (pinch) -- add in before simmering
