Spinach Manicotti

Directions
1/2 - 1 cup chopped onion2 cloves garlic, minced1 Tbsp butter20 oz (566 g) frozen spinach1 lb (500 g) cottage cheese4 oz (113 g) Mozzarella cheese1/2 cup grated Parmesan cheese (additional 1/2 cup parmesan for sprinkling on top)3 eggs, beaten1 Tbsp lemon juice21 manicotti noodles, cooked to slightly under-doneness1050 ml (4.5 cups) pasta sauce (1.5 700 ml jars)
Saute onion & garlic in butter until tender.
Combine with spinach, cheeses, eggs, & lemon juice: mix well.
Fill noodles with spinach mixture & place into baking dish that has a small amount of pasta sauce in the bottom.
Pour pasta sauce over noodles.
Sprinkle with "additional 1/2 cup" of parmesan cheese if desired.
Cover with foil & bake at 350 for 40 minutes.
Serving Size: Makes 21 stuffed manicotti
