1 can Cream of Chicken Soup1/2 cup skim milk1/2 tsp. salt1/4 tsp. pepper1/3 cup light miracle whip2 cups chopped cooked chicken1/2 cup chopped onion1 cup frozen peas or broccoli1/4 cup chopped bell pepper2 cups cooked white long grain rice1 cup shredded cheddar cheese, divided
Preheat oven to 350. Blend soup with milk, miracle whip, salt and pepper in a medium size bowl. Combine chicken, onion, frozen vegetable, bell pepper, and rice in a large bowl; mix gently. Fold soup mixture with chicken mixture and fold in 1/2 cup cheese. Spray a medium casserole dish with cooking spray. Spoon in mixture. Sprinkle top with remaining cheddar cheese. Bake until top is golden brown, about 25 minutes. Makes 4 very generous servings.
