Mimichelley's Easy Paleo, Low Carb, Vegan Guacamole

Ingredients
Fruit from 4 avocadoes1 tub fresh salsa, pico de gallo style, including vinegar brine1/2 - 1 C chopped fresh cilantro1/4 - 1/2 t salt1-4 t chopped garlic
Directions
Blend avocado (flesh only) with all other ingredients in a glass or other non-reactive bowl. Cover top of guacamole directly with wax paper to prevent browning and seal bowl. Allow flavors to blend at least 1 hr before serving. Keeps approximately 3 days.

Serving Size: Makes approximately 4 C guacamole - sixteen 1/4 C servings
