8 (1/2 lb) skinless bone-in checken thighs1 (14 oz) can quartered artichoke hearts, drained3/4 cup chopped pitted dates1/4 raisins12 pimiento-stuffed green olives, halves2 T pack brown sugar2 T balsamic vinegar4 gloves garlic, minced1 T dried basil1 TY drained capers1 T olive oil2 t dried oregano1/2 t salt1/4 t pepper, freshly ground1/2 cup reduced-sodium chicken broth
Combine all ingredients except chicken broth and combine in a large zip-close plastic bag. Squeeze out the air and seal the bag; turn to coat the chicken. Refrigerate, truning the bag occasionally, at least 8 hours or overnight.
Preheat the oven to 350F. Remove the chicken from the marinade and arrange in a single layer in a large roasting pan. Pour the marinade over the chicken; add the broth, Bake until the chicken is cooked through, 35-45 minutes.
Serving Size: makes 8 servings 1 chickn thigh each with 1/2 cup sauce
