Creamy Mexican Quinoa

Ingredients
3/4 cup dry quinoa1 1/2 cups chicken broth1 cup salsa1/3 cup shredded cheddar cheese
Directions
Combine quinoa, chicken broth, and salsa in a rice cooker and cook the same as rice. The quinoa is done once all the liquid is absorbed. Take the quinoa off the heat and stir in the cheddar cheese until it is fully melted.

Serve hot with fajitas, burritos, enchiladas, or any Mexican food you like!
