Nancys Carrot Cake Pancakes

Ingredients
1.5 cups flour4 T sugar1 t baking powder.5 t baking sodasalt, pinch1 t pumpkin pie spice2 eggs, beaten1.5 cups buttermilk3 T butter, melted.5 t vanilla1 - 1.5 cups grated carrotsorange zest, pinchginger, pinch
Directions
Mix dry ingredients together. Mix wet ingredients together. Blend gently until mixed. Let batter sit 30 minutes prior to cooking.

If desired, whip together maple syrup and 8-ounces of softened cream cheese and spread over the pancakes once they're done cooking. Drizzle more warm maple syrup over top and sprinkle with chopped pecans.
