add olive oil (or cooking spray) to pan and heat. Cook veggie sausage until browned on both sides. chop and set aside. Heat butter in skillet. Scramble egg while butter is melting and add egg to pan. fold as egg firms up. before egg is completely solid, remove from heat. Continue folding. Add cheese and sausage and top with salsa
