1/2 cup carrots, peeled and chooped1/2 medium shallot, chopped1 tablespoon plus 1 1/2 teaspoon finely chopped ginger2 tablespoons ricevinegar2 teaspoons toasted sesame oil2 teaspoons Tamari soy sauce1 tbsp lemon juice1 teaspoon sugar1 tablespoon extra light olive oil1/2 tsp grated garlic
Chop up carrots, ginger and shallots. Add to food precessor and pulse till fine. Add remaining ingredients except for olive oil. Pulse till it gets really fine. Then turn on food processor again and drizzle in olive oil. Chill and serve over salad! Enjoy!
