Crunchy Coleslaw

Ingredients
1/4 head fresh cabbage3 medium carrots grated1/2 cup chopped walnutsDressing1 cup Hellmann's Light Mayonnaise6 TBSP Apple Cider Vinegar2 TBSP Sugar
Directions
Chop the cabbage and grate the carrots. Place Cabbage, carrots and walnuts in a bowl. In a separate bowl combine sugar and 1 TBSP of Apple Cider Vinegar into the Mayonnaise. Stir till smooth. Combine remaining vinegar 1 TBSP at a time until all vinegar is used.

Pour dressing over the cabbage, carrots and walnuts and mix till dressing is evenly distributed.

Variation: Reduce sugar to 1 TBSP and add 1/2 cup of raisins (regular or golden).

Yield: approximately 7 servings of 1/2 cup each (this depends on the size of your carrots - mine were kind of skinny - if you use fat carrots, only use 2)
