Eggplant Parm w/cornmeal

Ingredients
1 eggplant1 c cornmealItalian seasonings3 egg whitesolive oil1 can diced tomatoes1 c Kraft Free Mozzarella
Directions
Cut eggplant into 1 inch slices. Dip in egg whites. Miz cornmeal and seasonings. Dredge eggplant pieces in cornmeal, covering both sides.
Put 2T olive oil in skillet, and heat. Fry eggplant until brown on both sides. Place fried eggplant in oven safe dish. Cover with diced tomatoes and cheese. Bake at 350 for 15-20 minutes.
