Caryn's Quiche - adapted

1 serving baby red potatoes (or 2 lg. red potatoes or other)2.66 servings canadian bacon1/4 cup milk (use 1/4 - 1/3 cup milk, not too much!)4 oz cheddar cheese5 large egg8 Tbs parmesean cheese shredded1/2 large onion1 1/4 cups spinach1 crust, single 9" frozen pie crust (or none at all for crustless - is absolutely perfect this way too!)
(Defrost pie crust? and pre-bake like 20 minutes?) Or don't use crust at all - I like it that way better!!!)
Cook potatoes in boiling water. Drain and dice. Place enough potatoes to cover nicely the bottom of the crust or dish.
Mix all other incredients and place in pie crust or square casserole dish.
Bake at 350 or 375 degrees until done.
Serving Size: 6-8 slices
