Introduction
This version uses the "impossible pie" method, instead of using a pie crust. It turns out very well using brown rice flour instead of all purpose flour to create a gluten free entree. The flour and baking powder form a thin, crispy outer layer. It does change the texture of the quiche, but it is still very good. Ingredients

4 eggs
1 1/3 cups light cream or milk
1/2 cup flour (use brown rice flour if adapting to gluten free)
1/2 tsp baking powder
1/2 tsp salt
1/4 tsp dry mustard
1/2 tsp lemon zest
a couple of dashes of Tabasco sauce (optional)
3/4 cup ham, finely minced
6 slices bacon, cooked and crumbled
1 cup grated Swiss cheese (4 ounces)
4 finely sliced green onions,
1/2 of a green pepper, finely diced
Tips
Excellent served with dijon or brown mustard. Leftovers can be served cold the next day, or warmed in the microwave. Excellent served with asparagus on the side. Cook in mini-muffin tins as a bit-sized appetizer. (Bake time, about 20 minutes) Substitute your own favorites--chopped spinach, and feta etc. for the meats and cheese to customize the quiche to your taste.
Directions
Preheat oven to 350 degrees. Mix egg mixture (eggs, cream, flour, baking powder, salt, dry mustard, lemon zest, and Tabasco sauce) and pour 1/2 of the mixture into a lightly greased 10-inch pie plate or quiche dish. Mix ham, bacon, and Swiss cheese and sprinkle evenly over the egg mixture. Pour the remaining egg mixture over the top, and sprinkle green onions and green peppers over the top. Bake at 350 degrees until "crust" is a golden brown and a knife inserted in the center comes out moist, but clean. Remove from oven. Allow to stand about 10 minutes before slice and serving.
