My husband asks for this soup even though he hates cauliflower. The vegetable is well disguised by the creamy consistence of this blended soup.
This creamy cauliflower and roasted red pepper soup gets its silky texture from the potatoes so there is no need to add milk or butter! You can substitute veggie broth for the chicken broth for a vegatarian meal!
Perfect for lunch or a light dinner. This cauliflower soup is easy to prepare and is very healthy for you.

This comfort food is made creamy by pureeing the cauliflower ... no dairy or fat added. This is my go to soup of choice. You can make it thicker, like a chowder by decreasing the water, or adding more cauliflower.
The secret to making thick and creamy soups is to add one potato while simmering your vegetables. If you have an immersion blender, you can puree your soup to be nice and silky. If you don't have an immersion blender, then puree this soup in two batches.
This is one of the yummiest, creamiest soups I've ever made--and at 75 calories a pop with a vitamin-rich cauliflower base, it's good for you too!

Even the most cauliflower avoident person you know will never guess. It simply tastes like a creamy, savory soup. Add clams to it with couple cubed potatoes and you have clam chowder with far fewer calories. Sauteed mushrooms for cream of mushroom soup. You name it, this can work for it.

A healthy and low calorie warming soup for those cold winter days. I usually stock up on butternut squash when they are in season. You can buy them whole at Trader Joes for the same price each as you pay by the pound at most other stores. I split them in two, remove seeds, brush with olive oil and bake (covered with foil) until they are very soft. Then I scoop the flesh into my foodsaver bags and freeze them in two to three cup servings for use in my soups. The soft squash is what makes my soups thicker without using the high calorie cream. Enjoy!
This is a creamy vegetable soup similar to a rich potato soup, but is primarily made of other veggies.
