Introduction

Ingredients

    Two large heads of cauliflower
    4 c. chicken broth
    1 c. white onion
    1 c. chopped celery
    4 cloves garlic, minced or chopped
    1-2 tsp. salt (to taste)
    1/4 tsp. pepper
    1 bay leaf (to be removed before blending)
    1 tsp. olive oil

Directions

Combine 4 cups of chicken broth with the florets from two large heads of cauliflower (rinsed) in a pot with salt, pepper, garlic, and bay leaf. Bring to a boil and then reduce to a simmer (covered) for about 20 minutes.

Meanwhile, chop 1 cup of white onion and 1 cup of celery (more if desired). Combine these with about 1 tsp. of olive oil and sautee until soft. Remove from heat.

Remove the bay leaf from the cauliflower. Take about 1/4 of the cauliflower and broth mixture and run it through either a blender or food processor until smooth. Repeat until all the mixture has been smoothed. (Be careful! Liquid is extremely hot--handle carefully in the blender/food processor!) Add the sauteed celery and onion and any salt or seasoning desired to taste. Mix well.

Although the calories in this recipe do not account for any additions, you could add bacon, a garnish of cheese, or other fresh vegetables (or maybe even leftover chicken breast?).

Serve with a crusty bread! Enjoy! (Makes 8 servings)
