A creamy, comforting casserole in just 30 minutes!

Chicken and a savory sauce wrapped up.

Chicken thighs are cooked with red & yellow sweet peppers, onion, mushrooms, and a sauce made from cream soups and white wine.

A touch of lemon-tarragon cream elevates simply sauteed chicken breasts. Serve accompanied by whole-wheat egg noodles, rice pilaf or parslied boiled new potatoes.

This can also be made with turkey if you prefer.

I created this dish for dinner one day when I was pressed for time with ingredients I had on hand and it was an instant hit! A low-carb delight as is, but you can serve over wide, whole-wheat noodles or brown rice if you are not watching carbs.

Low carb and very yummy! I threw this together with ingredients I had on hand and it turned out delicious! My husband and daughter could not get enough of it! I love crockpot recipes, especially in winter. You can use low fat/reduced sodium cream of chicken soup if you want to reduce fat and sodium more and serve this over rice or wide egg noodles if you aren't watching carbs.

My favorite dish at a local Mexican restaurant is their Chicken Enchiladas with Creamy Green Chile Sauce. I had to try and find a way to lower the fat and sodium so I could enjoy these without the guilt! I tweaked that recipe a bit to lower the sodium and fat, and came up with a winner! My husband and teen daughter gobble these up!

A hearty salad that is also very tasty. Whenever possible, I use low-sodium products. I used regular mayo. Although canned chunk chicken is available, I chose to use individually frozen breasts and cut them my self. The salad's taste is well worth the time spent chopping.

My daughter found this recipe in her company's magazine.

Use with the Biscuit Recipe in my list. Cut in half, pour the filling onto the bottom half of the biscuit, place the top half on top of the filling.

White beans, shredded chicken, green chile, sour cream and cheese. Need I say more? These have just the right amount of kick to them and hit the spot if you're craving Mexican food. They are high in fiber and so filling (one enchilada is a perfect serving size). The easiest way for me to make shredded chicken is in my crock pot. I let it cook all day while I'm at work, then I come home and shred it and freeze the broth for other recipes. Click here for the recipe. This is a Campbell's recipe that can be made in the oven or the crock pot (with alterations). I made this recipe in the oven. My family liked it so I will be making it again!

This dish is good and very easy to make! I took the picture after I ate! It was too good, and I was too hungry to stop and take a picture first!
