Sounds good ... I like the idea of adding mushrooms (fresh) and onion. As a type II diabetic AND a heart patient, how can I reduce the sodium and unnecessary fats (chicken is necessary)??? I wasn't sure the mayo would bake well so I used no-fat greek yogurt in place of it and sour cream. Used Walmart brand 5 cheese Italian blend for cheese. Mixed in kale, sauteed it with spinach before adding. Sauteed chicken (season chicken! Sage/thyme/garlic&herb works) with bell pep and onions. A+! Submitted by:

This is a lot like an old college favorite. It was a vegetarian house so we didn't add the chicken, and no low fat options, but for flavor there was a packet of dry onion soup mix. Always tasty, served with brown rice. Submitted by:

This dish had a somewhat salty taste and was kind of tangy. I added a can of mushrooms and I only used 1 tsp of garlic powder. Also I used frozen spinach (drained & squeezed the water out) and the spinach taste was very good. Not sure I would make it again. Submitted by:

When I'm in a pinch for a quick lunch for one, I put 2-3 oz. cubed rotisserie chicken, on a bed of fresh spinach, add onion powder and black pepper and half a slice of low fat pepper jack cheese and microwave for 1.5 minutes. Submitted by:

I added some sliced mushrooms and sauteed them with the spinach prior to mixing it together as well and did low fat sour cream. The topping was rich and made a lot so I may cut back on it a bit next time to save even more calories. Submitted by:

Delicious and will make again. The only problem is that the chicken was over cooked. I will try to either half cook it before adding the mix are not cook it before adding to the mix.

This recipe is great! I used 20 ozs of fresh spinach instead of the frozen kind. Also substituted the sour cream for non-fat cottage cheese, added some sweet peppers and mushrooms, served with couscous/rice/pasta- amazing! My boyfriend said he felt like he was eating at a restaurant! Submitted by:

So good ! My whole family loved this.. I subbed no fat greek yogourt for the sour cream, and sautéed an onion, and sautéed fresh spinach before mixing with the chicken. Wow..I just made this and it was deelish! I did change some things . I cooke the cubed chicken with garlic, onion, tumeric, a bit of sea salt & lemon pepper.
