My "tradition" of roast beef, with some added nutritional value from adding more vegetables. Rutabagas look and sound weird to people, but they're easy to cook in this recipe, and VERY high in potassium!

Beef Chuck Pot Roast in a Slow Cooker is easy and dinner is ready when you get home.
Very simple recipe that can be served as a sandwich, over rice or over a vegetable such as broccoli or romaine lettuce. Leftovers make great beef enchiladas too!
Just add mushroom soup, and dry onion soup mix. Best done in the slow cooker.

This recipe is from my friend Vicki. It's very delicious! The original recipe calls for a 3 pound roast. But I only had a 2.5 pounder, so I calculated it at that weight.
Delicious and easy...just chop the veggies, pop it in the slow cooker and go! This also makes a TON of servings, and is good served as a sandwich later.
This can also be made on stovetop or in oven. Freezes well.
