    2-1/2 lb beef chuck roast
    salt and pepper to taste
    1 tbs oil
    3 c water
    1 tsp instant beef bouillon
    4 medium red potatoes, peeled and quartered
    1 lb carrots, cut into 2-inch pieces
    1 onion, cut into wedges


Trim fat from meat and allow to stand at room temperature for 20 minutes. Dissolve beef bouillon in water. Pat meat dry with paper towels to remove any moisture.

Rub salt and pepper over the meat. Brown on all sides in a large skillet over high heat, about 4 minutes per side.

Place the roast in the slow cooker and add the bouillon and water, carrots, onion, potatoes, and celery. Cover and cook on Low setting for 8 to 10 hours.

Can be served with dinner rolls.
