3 oz. cooked beef fajitas - John Soules is a great brand
1 can Progresso Light Beef Pot Roast soup
1 cup precooked brown rice
1 cup sliced carrots
1 cup sliced or diced zucchini
Directions
If you have leftover brown rice, this is a great way to use it.
If not, then cook 1/2 cup brown rice to make 1 cup cooked - or cook 1 cup so that you will again have a cup left over. It takes me 45 min. to cook 1 cup brown rice...
While rice is cooking, clean & slice carrots and zucchini.
In large microwave safe bowl, put carrots with some liquid from the canned soup. Microwave for 5 minutes.
Add zucchini, microwave 3 more minutes.
When rice is done, measure out 1 cup.
Add beef fajitas (you can chop them into bite-size pieces if you like) and brown rice, microwave 2-3 more minutes.
It's a tasty soup, no need to add more seasoning - filling and low-calorie. You could substitute other vegetables, whatever you have in the fridge...
