Introduction

Perfect for cool autumn and winter days! Thick and creamy, quick and easy. Perfect for cool autumn and winter days! Thick and creamy, quick and easy.

Ingredients

    2 Tbsp canola oil
    1 medium onion (6oz), chopped
    3 1/2 cups GF Vegetable broth
    1 large head cauliflower, cut into florets
    black pepper
    salt
    pinch ground nutmeg
    chopped chives (optional)

Directions

Makes 6 servings

In stockpot, heat oil over medium heat. Add onion and cook, stirring, until softened. Add the broth and cauliflower; bring to a boil over high heat. Reduce the heat to medium-low and simmer, covered, until the cauliflower is tender.

Working in batches, puree in a blender or food processor until smooth. Return to stockpot and seaon with pepper, salt and nutmeg. Serve hot and garnish with chives if desired.

    Wow this was way better than I imagined. It was wonderful! I did not put nutmeg in or chives, but while blending added raw carrot so it had orange flecks and looked pretty.... the best part was using the leftovers! First I added it to mashed potatoes and then scrambled eggs. No milk wonder! - 8/29/09

    This was delish and super easy! Great for a soup and salad lunch or add some nice crusty bread with that soup and salad for a hearty dinner. Yum-o! Very tasty KAECEY! - 10/4/09

    Very Good
    I only had a small head of cauliflower so I used some broccoli, too. I am considering adding some rinsed pinto beans for more protein. Or maybe some plant based 'crumbles.' - 5/17/20

    Fry med onion in 1 Tbls olive oil 3 min. Add 1 carton chicken broth 900 mls 1/2 tsp salt & 1/4 tsp pepper 1/8 tsp nutmeg no chives & cauliflower and cook for 15-20 min.
    Puree in batches. Makes 6 serv CB
